97% Cabernet Sauvignon, 3% Merlot.
Musk and red fruit notes on the nose. Soft red berry flavours on the palate. Excellent length and finely balanced. Made from outstanding, cool-climate, Murrumbateman grapes, using the traditional ‘saignée’ method for making Rosé wines. Cabernet Sauvignon grapes destemmed and crushed, with the juice left in contact with its skins for the start of the fermentation process (to induce the pink-red colour and primary fruit flavours typical of the Rosé style). The skins were then removed and the wine fermented to completion. A small addition of Merlot has contributed enhanced complexity.
